Mex 1 Coastal Cantina

Our first post!! Holy whaaaaaaaaaaaaat?!?! We recently had the pleasure to shoot and learn about food from one of our favorite joints. As you get to know the two of us you will find we have an insatiable appetite for Mexican food... so it's fitting that our first stab at this comes from none other than Mex 1. That's right, we just got hooked up with tacos baby!
We'd like to start by talking about why we love Mex 1 so much in the first place. First off, the atmosphere is chill AF. From the friendly and down to earth wait staff, to the irie tunes and rad surf videos playing in the background. The idea for this baja cantina is to transport you to the Mexico 1 interstate, a strip with no shortage of surf spots and taco stands. We believe they hit the queso on the dilla, and that's what makes this is one of our absolute favorite spots to unwind with some comfort food and a cold one.
Whether you belly up to the bar or snag a seat at one of the community tables, complimentary chips and salsa are comin at ya! This is often the deciding factor when Callie and I are hangry and trying to decide where to eat. Not only is this free appetizer necessary in preventing us from eating our fists, they're also the best damn chips and salsa we've found in the 843. Fried in canola oil and sprinkled with fine popcorn salt, try to stop yourself from shoveling the whole basket of chips into your mouth at once. The salsa is an in-house recipe that is prepared fresh every morning. If this colorful snack isn't enough, we might double down and order the "Queso Fantastico".
Now for the tacos! In Bangin Shrimp we trust. The sweet and spicy combination of Mex 1's special sauce is unmatched. Shrimp are lightly fried creating tender meat with a buttery flakey crust (shout out to grandpa Dan, that shit's hard to say). Beyond that, you really can't go wrong with any of the taco selections. If you come for brunch you'll even get breakfast taco options to choose from. Huevos Rancheros tacos? Uhhh... Yah. When we're more ambitious, the Cali Burger Torta with a side of Street Corn is enough to drop us quicker than thanksgiving dinner. Dining here inevitably ends with one of us having to tear the other away from the table. As full as we might be, we're always ready for more!
